Please help! How much water do I put in a crawdad/ crayfish tank?

My brother and I found a crawdad/ crayfish (whichever you like to call them) at the lake. He took him home, and now we’ve got no other choice but to try and keep him. I refuse to let the poor thing die; so, I’m trying to give him the best care possible.
However; I’ve got a 5 gallon fish tank little Filberto will live in. Do I fill the entire tank with water? Just half way? Should I include rocks that let him get out of the water? Do they NEED to get out of the water?
Also; his diet. I know they’re omnivores; but I still don’t know what to feed him. I’d hate to go out and buy sinking pellets. Can he eat dog food? Maybe live off of veggies for a few days until I buy something better?

Please give me as much information as possible. I want the little guy to survive! Thanks!
I’m aware the tank is too small; but its all I’ve got, and I’m going to make the best of it for the little guy.

Drive it all the way back down to the lake? I’m sure even PETA wouldn’t do that. I refuse to just kill it; so, a 5 gallon tank will have to work.

Besides; my question didn’t include anything about the tank size, nor a lecture. :] Thank you.
The water has been perfected. I’m no novice tank-handler.

Water is at 70 degrees F; 0 ammonia, 0 nitries, and a PH of 7.5. Its all taken care of. I just need to know how much water to put in.

    To my understanding they can live fully submerged in water, but you could give him some place to come out.
    The little buggers will eat anything, you can throw in some lunch meat, they love chicken bones and will clean all the meat off of them. They are scavengers and can eat anything although I thought they were mostly meat eaters. Just throw scraps in and it should be fine.

    5 gallons is way to small for a crayfish, let him go back to the lake or his going to live a short stunted painful life.

    In just a matter of hours there will be an ammonia spike, and then eventually a nitrite spike. Which will kill the crawfish. You havent cycled the tank so you will need to do probably 50% water changes every other day to keep levels under control.
